Whole-clusters are handpicked and immediately brought to the pressoir to be gently pressed. The delicate operation of clarifying the must (called débourbage) is done as soon as the juice is extracted for a period of 24 hours. The life of the wine has begun. The alcoholic fermentation of each plot takes place at a low and controlled temperature (18°C ) in small thermoregulated stainless steel tanks and the wines go through a malolactic fermentation.
A unique savoir-faire and four generations of the Sainz-Clouet family have perpetuated the art of blending and making “probably” the very best champagne! Today, the family still gather to taste the wines and to create the magic of our blend using their wealth of knowledge and oenological experience, searching for the perfect harmony.
The wine is about to become Champagne ! To encourage the exquisite bubbles to rise in the bottle, we use the state-of-the art technology with fermenting bins and oxygen injection systems. The secondary fermentation, “prise de mousse”, slowly takes place in the darkness of our cool chalky cellars. Our champagne rest on lees for a minimum of four years to add richer aromas.

2013 was harsh and very capricious. Our dormant vines were covered with snow in the winter. Spring came a little later than usual with intense cold in May. Violent storms took place in June leading up to an exceptionally warm and sunny summer, allowing the cycle of the vineyard to ripe the grapes with an extremely high freshness.
The harvest in 2013 was overdue and started quite late but the result was worth the wait. This weather pattern exalted the finest of our Pinot Noir and Chardonnay. The quality of the fruit was superb and 2013 is to become a year that will go down in Champagne’s history books.
This vintage rested on lees for 8 years in our dark and chalky cellars. It reveals an extraordinary finesse and a capacity to age.
It is a very limited blend of the most expressive wines from 2013. Only 2,667 bottles were produced and only just a few dozen left!

CHARACTERISTICS OF THE YEAR 2014 IN CHAMPAGNE
The Champagne Alexandra Sainz Millesime 2014 reflects a season of varied weather, starting with heavy winter rains followed by a warm spring that fostered excellent vine health and quick, successful flowering. While August was cooler and wetter, September brought ideal sunny days and cool nights, leading to a harvest of exceptionally healthy, full grapes.
Our 2014 vintage showcases a beautifully crafted balance of structure and complexity, combined with freshness and precision. The Pinot Noir enhances the wine’s rich fruit character, while the cooler summer preserves its acidity, contributing vibrant citrus notes and crisp freshness. With nine years of aging on the lees, the champagne gains subtle hints of brioche and freshly baked bread, while our unique Bouzy terroirs impart a distinctive mineral quality, adding depth and layers of complexity.

On the nose, freshly baked gingerbread and candied fruits alongside ripe mirabelle plums.
En bouche, flavors of perfectly ripened figs mingling with light notes of brioche and honey giving the way to intense cooked fruits and tarte tatin flavor, enhanced by a lovely well balanced finish and a final hint of crisp Bosc pear.
Best served chilled between 46-50°F.
Place the bottle in an ice bucket filled with ice cubes and water and let chill for about 15-20 minutes before serving.
